Spray a medium fry pan with cooking spray and saute shallots until transparent. Scramble 3 Country Hen eggs in separate bowl with a whisk. Add salt and pepper to taste. Add turkey or ham and plantains to shallots and saute until heated through. Add scrambled eggs and incorporate ingredients. I find that a rubber spatula works best for this part. You can add mozzarella (if you choose) and continue to mix ingredients until fully cooked. Spoon onto plate and enjoy your exotic San Juan Scramble.
