Huevos Rancheros Rostados

Ingredients:

  • 1 can (8 ounces) tomato sauce
  • 1/3 prepared salsa or picante sauce
  • ¼ cup chopped fresh cilantro or thinly sliced onions
  • 4 large Country Hen eggs
  • Butter or margarine
  • 4 corn tortillas (6 inches) crisply fried, or 4 prepared tostada shells
  • 1 cup (4 ounces) shredded cheese for tacos


Directions:

Combine tomato sauce, salsa and cilantro; heat in microwave oven or in saucepan over medium-high heat until hot. Fry eggs in butter, sunny side up. Place one Country Hen egg on each tortilla; top with sauce and sprinkle with cheese.

Variation: Spread tortillas with heated refried beans before topping with Country Hen eggs, if desired.
