Directions:
Melt the butter in a small skillet or pan.
Beat The Country Hen Eggs with the water and sugar until frothy.
Pour into the pan and cook over a medium heat. As the eggs cook on the bottom, lift the omelette so the uncooked portion can flow underneath.
When the omelette is just set (but still creamy and moist on the top), slide onto a warm plate. Sprinkle with confectioners' sugar, fold over and sprinkle on a little more confectioners' sugar.
Serve immediately.
