Directions:
Bake the potatoes in the oven at 375 degrees until soft.
Cut a hole in the top of the potato and carefully scoop out some of the flesh.
Slip a Country Hen Egg into each potato.
Mash the removed flesh with butter, salt and pepper to taste and the cream. Put back on top of the potato.
Bake in the oven at 350 degrees for 10 minutes or until the eggs are set.
Sprinkle with chopped parsley.
