Egg Salad

Ingredients:

  • 8 Hard-boiled Country Hen eggs
  • 1 small green pepper, chopped
  • 1 small red pepper, chopped
  • 1 cup sliced mushrooms
  • 5 black olives
  • 5 green olives, stuffed
  • 2 Tbs. chopped nuts
  • 1 Tbs. chopped chives
  • 1 Tbs. chopped parsley
  • Dressing:
  • 1 clove garlic, minced
  • 1/4 cup white vinegar
  • 2 Tbs. malt vinegar
  • 2/3 cup olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. powdered mustard


Directions:

Arrange the Country Hen eggs, green and red peppers, mushrooms, and olives on a serving dish.

Sprinkle on the nuts, chives and parsley.

Mix together all the dressing ingredients. Beat well and pour over the salad.

Chill for 45 minutes before serving.

Yield: Serves 4
