• 1 bag of fresh chopped spinach
• 6 beaten Country Hen eggs
• 1/2 cup of oil
• 1 cup of chopped onion
• 2 cloves of garlic minced
• 3/4 cup of grated parmesan cheese
• 1 pinch of fresh grated nutmeg
• Salt and Pepper to flavor

Mix all ingredients and pour into a 10 inch pie shell.

Bake for 30 minutes at 400 degrees (depends on oven) or until the center comes out clean with a knife.
